Every item on your menu has two handles on it — what you charge, and what it costs you. Pull either one and the month you just read is worked out again in front of you.
It tells you four things: the margin on that item, the profit on one plate, what it does to the month, and how many you have to sell to cover your share of the fixed bills.

The middle full-service restaurant kept 2.8% before tax that year. These are medians of separate lines from separate restaurants: they do not add up into one restaurant, they are not a target, and not one of them is your normal. The line that actually separated them was wages — the full-service restaurants that made money in 2024 ran 34.2%; the ones that lost money ran 42.9%.
A goal is a row. It sits in the statement with everything else, and it is measured the same way.
