A sample morning

A restaurant group.

The page that lands before seven, for a casual group of five restaurants. Harborline · All 5 Stores is invented, and so is every number on its page. The page, the order it is in and the way every line is set against that place’s own normal are the ones the product returns.

THE ONE THING TODAY
Midtown lost $780 last night, its fourth losing Tuesday in a row.
Five cooks on the line all night for 117 covers. The other four stores ran three. After 8 PM: 12 guests, $370 of sales, $200 of kitchen labor and $90 on the floor. After food and card fees, that stretch lost $45. Dev cut the floor, not the line. Two reviews say lunch came out slow. The cooks are on the wrong shift. Three on the line Tuesdays, 2 PM to close, not five: 16 cook hours, $320. Put 2 of those hours on a lunch cook, 11 to 1. Net $280 a Tuesday, $1,200 a month.

All five stores, every invoice line against last week’s. Chicken is $77 of it.

Labor. Kingsway kept three swing cooks an hour past the 8 PM drop 3 nights a week: 9 cook hours, about $180 a week, for 20 covers. Uptown: 12 guests canceled after 6 PM: about $370 of sales, $245 after food and card fees, more than the $157 loss.

Invoices. Bayview Foodservice, yesterday: chicken breast $118.40 a case, up from $108.60. 14 cents a plate: the $14 chicken sandwich goes from 32% to 33% food cost. 34 cases a month, about 2,400 plates: $330 a month, $77 a week.

Reviews and competition. 4.5 on 58 new reviews this week. Rio Taco, across from Kingsway, started a $2 Taco Tuesday; Kingsway still sold 32 fish tacos, usually 20.

Weather and events. 54°F tonight: heaters on at Kingsway and Harbor Point by 5. Saturday sunny, farmers market near Harbor Point.

THE ACTION LIST · TODAY, IN ORDER
1.Midtown: Three cooks from 2 PM, lunch cook 11 to 1: $1,200 a month. That still leaves Midtown $500 short a Tuesday. Fix the slow lunch the two reviews named, then run a Tuesday lunch special to bring back 40 guests at about $19 a check: $760 of sales, $500 after food and card fees, and Midtown breaks even. Owner: Dev.
2.Kingsway: Swing cooks off at 8, not 9: about $780 a month. Tonight, propane before 5. Next Tuesday, prep 36 fish tacos, not 20, against Rio Taco’s $2 deal. Owner: Maria.
3.Uptown: Two servers off at 8 on the 3 slow nights a week: about $60 a night, $780 a month. Confirm text at 3 PM, card on tables of 6 or more: $370 of sales last night. Owner: Carla.
4.Chicken: Ask Bayview to hold $108.60 or quote elsewhere by Friday. If it stays, sandwich $14 to $14.50 at all five: about 1,500 a month, $750, more than double what Bayview added. Owner: you.
5.Harbor Point: Fish tacos $15.99: $110 a week. One more patio server Saturday 11 to 2: $45 for 14 more guests, $430 of sales. Owner: Sam.
Ask Syphor anything: “What would Midtown make on a Tuesday with the kitchen closed at 9?”
