A sample morning

A group of pubs.

The page that lands before seven, for a group of four pubs. Copper Kettle Pubs · All 4 is invented, and so is every number on its page. The page, the order it is in and the way every line is set against that place’s own normal are the ones the product returns.

The money. Northgate’s 63 wing orders went out with two pints each: the wings made $2.40 an order, the two pints about $11.

Old Town. $190 of bar labor for 14 tabs, about $500, after 9, fourth quiet Tuesday running. The second bartender’s 9 to 12:30 is $80. Send her home at 9 and last night’s loss is $339, not $419; the rest is Old Town’s share of rent on a $3,200 night.

Invoices. Whole wings went from $98 to $109 a 40 lb case on yesterday’s invoice. Menu unchanged. At 178 a case, an order of 10 costs $6.10, up from $5.50, and sells for $8.50. Wing night food cost goes from 65% to 72%. Twenty-two cases a week, 7 at Northgate: $242 a week, $12,600 a year. Lager: Station Street and Northgate pay $9 a keg more than the other two. Nine kegs a week, $350 a month.

Beer. Station Street’s lager kicked at 10 and the line sat dry about 40 minutes with two kegs cold in the walk-in: about 25 pints at $7.50, $190. Its kegs pour 114 pints to the others’ 118: 4 pints on 4.5 kegs a week, $585 a month.

This week. Thursday’s opener is near Station Street; big games run 41% over a usual $5,900 Thursday. Foxglove opened near Northgate yesterday, $5 pints until 7. Two reviews, both Old Town, both 2 stars: "waited 50 minutes for food Saturday" and "one cook for a full room." Saturday had 48 covers on one cook.
