A sample morning

A hotel.

The page that lands before seven, for one hotel with its restaurants and bar. The Wexley Hotel · All Outlets is invented, and so is every number on its page. The page, the order it is in and the way every line is set against that place’s own normal are the ones the product returns.

THE ONE THING TODAY
You are owed $4,350 in food and beverage, $5,307 with the 22% service charge, before tax. Three banquets last month came in under their minimum and were billed only for what they ate. Checks in the POS, minimums in the contracts; nobody matched them. About $52,000 a year in food and beverage if last month is typical.
The Hale wedding was $1,900 short of its $18,000 minimum, the medical society $1,600, a law firm’s dinner $850.

For the week: department profit is before rent and overhead, the way your hotel P&L counts it. Labor and other expenses are estimates until payroll and the bills post.

11 invoices this week, every line against last week’s. Eggs are $94 of it.

In-room dining. 31 orders yesterday, 4 after 11 PM for $118. A cook at $34 and a server at $20, with taxes and benefits, stayed until 2 AM for those 4: 3 hours each, $162. Run it from the Lobby Bar until 12:30 instead: the Grill closer preps four items at 10:30 for $12; the bar server, on until close, runs trays; after 12:30 the front desk has the grab-and-go case. You keep $150 a night.

Breakfast labor. 4 breakfast servers for 96 covers; 3 handle a usual Tuesday. The fourth was 5.5 hours at $20 with taxes and benefits, $110 a shift, $550 over five weekdays. Three reviews called Sunday breakfast slow: 3 servers, 131 covers.

Invoices. Carrow Creek Dairy’s Monday invoice has eggs at $38.50 a case, up 14% from $33.80 last week; at 20 cases a week, about $94 a week. That is 5 cents a two-egg plate: the $14 plate goes from 38.0% to 38.4% food cost, 35.8% at $15. Menu unchanged.

Conference week. A 2,400-person medical conference starts Thursday. Ember Lane Kitchen, new across the street, sells a $12 burger until 6; badges pass it at 5. Thursday to Saturday: dry, about 60°F.
