A sample morning

A fine dining group.

The page that lands before seven, for a group of three fine dining restaurants. Larkspur Group · All 3 Restaurants is invented, and so is every number on its page. The page, the order it is in and the way every line is set against that place’s own normal are the ones the product returns.

THE ONE THING TODAY
$1,400 a month, about $16,900 a year: since mid-August Northwater bills Oro more than Larkspur for halibut, scallops and crab. Same vendor, same item codes.
Northwater moved Oro to its own account number in mid-August, so Oro lost the group’s price.

All 3 restaurants, every line against its mid-August price. Northwater’s Oro account is $325 of it, Crestline’s butter $140.

The money. The Pembrook averages $10,000 a night against $3,408 in fixed bills. At 30% food and drink, 36% labor and card fees it breaks even at $10,900, so it gives up about $280 on an average night. Net for the week: about $2,000 lost. The Pembrook’s labor for the last 7 days: $25,200, 36% of $70,000 in sales.

Invoices. Northwater charged Oro $29.00 a pound for halibut and Larkspur $24.80. 60 pounds a week at Oro: $252. Oro’s $48 special, 7 ounces, costs $14.10 to plate against $12.25 at Larkspur’s price: 22 plates last night, $41 gone, menu unchanged. Scallops $1.90 a pound over on 25 pounds a week, crab $3.10 over on 8, $72 a week more. Crestline’s butter went from $3.40 to $3.80 a pound, 350 pounds a week at all three, $140 a week.

Labor. The 12 canceled at 6 and all 9 people stayed on, $3,060 of labor on $8,500 in sales. From 6:30 the second bartender and two line cooks cost $310, serving 14 walk-in covers. Send them home at 6:30 and the Pembrook loses $443 instead.

Reviews and competition. Two new reviews called the Pembrook’s music too loud after 9. Maison Vey opened near Oro last Thursday, and Oro’s Thursday came in 6% under usual.

Events and weather. Restaurant Week starts Monday at Larkspur and Oro, $65 for three courses. Larkspur is full Saturday with 22 on the waitlist. Saturday 7 PM is 52°F and clear: open the patio with heaters, 16 seats.

Ask Syphor anything: “Which items do my restaurants pay different prices for?”
