THE ONE THING TODAY 136 pints left your taps last week that the POS never rang: $1,020 at your board price, about $215 at what you pay. 110 of them came off the Hazy line. 9 half barrels at 124 pints, less 7% for foam and line cleaning: 1,038 pints. The POS rang 902. The Hazy: 3 kegs, 236 rung against 346. If the line checks clean and the pour is still short, those Hazy pints went to guests: $3,600 a month, a talk with the bar. |

Draft. All three Hazy kegs came up short, 37 pints each. That is the line or the pour, not the keg. Labor. After trivia let out at 10:15, two bartenders, a cook and a server stayed to the 12:30 close for 6 tabs: about $220 in sales against $190 of labor, about $35 lost after beer and food. That close and the foamy Hazy are why a Tuesday 5.7% over usual lost $50. Second bartender off at 10:15, cook at 11:30, and that Tuesday makes about $15. Invoices. Monday’s distributor invoice raised the Hazy IPA $14 a keg, to $196: 11 cents a pint, and your $7.50 pint never moved. Wings went from $3.90 to $4.33 a pound: $60 a week on your usual 140 pounds, 43 cents off your $13 ten-piece. Guests. Two reviews said the bar ran short-handed Saturday at 10; both bartenders stay on game day. Foxglove Tap House opened two blocks south with $5 pints until 7. Ahead. Saturday’s game is at 3:30; your last two game Saturdays did about $8,830 against a usual $6,400. Rain closes the patio Thursday; rainy Thursdays run about $600 under usual.
