Quick service.

The page that lands before seven, for a quick service group of five stores. Crispin’s Chicken · All 5 Stores is invented, and so is every number on its page. The page, the order it is in and the way every line is set against that place’s own normal are the ones the product returns.

THE ONE THING TODAY
About $370 of chicken went in the trash at Maple last week.
Same case, same supplier: Elm Street got 131 pieces out of a case; Maple got 120, so 46 cases did the work of 42, four cases at $92.50. Maple’s waste log puts it at 2 to 5 PM, cooked for a lunch that has left: about $19,000 a year.

All five stores, every invoice line against last week’s. Thighs are $400 of it.

Labor. Westgate kept four on after 8 PM last night: $118 of labor on 23 orders, $262 of sales, 45% labor for that stretch. At Maple, three shift leads did 38 hours of overtime last week, $285 in premium; two already have 31 hours since Sunday. At Fifth Avenue, leads ran $218 of overtime premium last week, labor 29%.

Invoices. Thighs went from $1.12 to $1.20 a pound yesterday. The $8.99 Thigh Combo carries 1.1 pounds, so its chicken goes from $1.23 to $1.32, 9 cents more a plate; on the 4,560 Thigh Combos sold last week, about $400 a week. Menu price unchanged.

Henhouse. Henhouse Fry Co. opened a mile from Westgate, two-piece combo $7.49 against your $7.99. Westgate’s dinner has run $280 a night under its usual since. Three reviews called the dining room dirty.

Fair and rain. The county fair runs Thursday to Sunday a mile from Airport Road; last year it added about $900 a day, $3,600 over four days, mostly after 4 PM. Rain Thursday: on rainy days delivery runs 18% over its usual 180 orders, 32 more, $370.

THE ACTION LIST · TODAY, IN ORDER
1.Add: Airport Road: one more on the drive-thru Thursday to Sunday, 4 to 10 PM, $390 of labor so the window holds 3:10 while the fair brings about $3,600.
2.Fix: Westgate, Chris: dinner runs $1,960 a week under its usual since Henhouse opened. Tables wiped every 30 minutes from 5 PM, checked in tonight’s logbook; three on the close, $210 a week back. If dinner is still $280 under next Wednesday, test $1 off the two-piece dinner combo, if your brand allows: $60 a night, paid back at 14 more combos, $4.50 kept on every one after.
3.Prep: Elm Street: prep Thursday’s 60-person catering, $720, $12 a head. One more packing delivery Thursday, $100 against 32 more orders, $370.
4.Fix: District manager: cap leads at 40 at Maple and Fifth Avenue, $503 of premium last week. Maple posts two lunch shifts today, so the window gets back from 4:05 to its usual 3:35.
5.Fix: Maple, Tasha: cook 2 to 5 PM on Elm Street’s chart, log every drop. $370 a week, $19,000 a year.
6.Call: You, to your co-op: thighs from $1.12 to $1.20 a pound, $400 a week.
